Swiss Chard, Sprout and Toasted Almond Salad with Strawberry Balsamic Vinaigrette

Ingredients
  • 8 large swiss chard leaves, finely chopped
  • 1 C any sprouts, I used daikon sprouts
  • ½ C raw almonds (you could also use pre-roasted)
  • 6-8 large strawberries (can be frozen and thawed)
  • 2 Tbs balsamic vinegar
  • 4 Tbs olive oil
  • 2 garlic cloves, minced
  • ½ tsp sea salt
Instructions
  1. Combine swiss chard, sprouts and almond in a large bowl.
  2. In a blender or food processor add strawberries, balsamic, olive oil, garlic and salt and blend until smooth.
  3. Drizze over salad and serve immediately.
